Well, it is possible to make french fries that are far less unhealthy than the ones you buy at the takeout counter.
There are a few different techniques for cooking healthy french fries; but here’s one that is popular for the following reasons:
- You’ll need a much shorter frying time, which means less oil absorption while cooking;
- Finished product is nice and crispy/chewy on the outside while staying moist and mealy on the inside;
- Fries look nice and plump, not soggy/wrinkly.
So, here’s the not-so-secret method for cooking healthy french fries:
- Start with really fresh, washed, clean potatoes; peeling is optional. Yukon gold potatoes are great.
- Get enough water to cover potatoes boiling on the stove-top. Pot should be big enough to hold the quantity of potatoes you want to fry.
- When water starts boiling, gently add the uncut potatoes, avoid splashing hot water on yourself.
- Allow potatoes to cook just to the point of done-ness, but not to the point of softness (test with a fork).
- Drain potatoes, allow to cool.
- Slice into sticks, as desired.
- Get your frying pan ready, pour enough cooking oil in cold pan to cover each batch of french-cut potatoes.
- Get the oil to start heating up (not quite to the highest mark, but almost there). When oil starts to agitate, test by placing one french fry in the oil. If it starts sizzling, the oil is hot enough. This step is critical, as if the oil is not hot enough, you will not get the nice crispy/chewy outside texture on your fries.
- Gently lower a batch of fries in the hot oil, keep an eye on them and make sure they don’t start to scorch.
- When potatoes are done to your liking (you will find this part will not take as longer as if you did not parboil the potatoes), remove them with a slotted spoon to a kitchen-towel-lined colander.
- Allow potatoes to cool slightly, sprinkle with salt and…
- ENJOY your healthy french-fries. Parboiled potatoes fried in oil at high heat means less cooking time, less oil absorbed, giving much healthier french fries.
To boost the “healthiness-ratio” of your french fries, eat with vegetables and/or a high-protein dish, such as lean meat or fish.
